Through a virtual scenario, detection in children’s menus of those foods related to food allergies or intolerances, and proposal of substituting them ensuring that similar energy contribution and macro-nutrients are provided.
TEACHING GOALS: The general goals of the simulator are the following: 1. To recognise the main food allergies and intolerances identifying the associated pathology. 2. To identify the nutrients causing food allergies, analysing their presence in the food. 3. To determine diets suitable for people and/or groups with specific pathologies, interpreting their nutritional needs. The specific goals are the following: Goals of conceptual nature (declarative) – To determine the diet of special groups. - To identify the nutritional requirements of an individual or group. - To explain the pathologies associated with the different kinds of food allergies and intolerances. - To analyse the food composition tables. - To describe the general criteria for the reformulation of the diets. - To relate each kind of macronutrient with the food allergies. - To describe the criteria of application and use of food substitution tables when creating and adapting the diets. - To describe cross contamination. - To interpret the food labelling regulations. The procedural goals are the following: - To make “standard diets” for special groups. - To choose the foods involved in a food allergy or intolerance. - To determine the nutrients provided by each food. - To identify the operations that should be performed to avoid cross contamination. - To interpret the labels of different kinds of foods. The attitudinal goals are the following: - To calculate the additional cost of the ingredients for special groups. - To assess the influence of the diet on the health of the individuals. - To assess the role of the traces of foods in the diet of special groups.

Resolution: 1024 * 768 (adapted to the resolution as long as the aspect ratio is 1:333, 800x600, 1024x768, 1280x960)
